ASHE COUNTY, N.C. — Amanda Roten has been making grilled cheese her whole life.
A plain grilled cheese isn't plain here — it has a lot of different cheeses. Many have it with mayo, lettuce and tomato as well.
It's a dish that always brings back good childhood memories for her. They are memories she hopes others have as well.
"When someone takes a bite of their grilled cheese, I want them to think of the first time they had a grilled cheese," Roten said."When someone takes a bite of their grilled cheese, I want them to think of the first time they had a grilled cheese," Roten said.
She is the head chef for Ashe County Cheese's first food truck. Sandwiches on the truck are focused on cheese.
The Ashe County Cheese factory has been around for more than 90 years. It was started by Kraft in 1930 and in 1944 was bought by two Wisconsin cheesemakers.
Now, tourists can go and watch how that cheese is made, go across the street and buy their many flavors, and go to the truck and try some meals.
"Our BLT has a mixture of Mountain Gouda and Mountain Marble," Roten said.
Pork Belly is one of their most popular sandwiches.
"We do want to make that connection to make someone's day better and to enjoy," Roten said.
