AUSTIN, Texas — There are so many ways to celebrate cheese on National Cheese Day — mac and cheese, queso, grilled cheese, on top of a burger, in a sandwich...but we’re going to get George Strait on you and go back to the basics of — cheese.

Austin has no shortage of charcuterie. Yeah, you’ll get some meats, some pickles, some fruity spreads and bread, but let’s be honest — it’s all about the cheese.

Here’s where you can snag the most crucial cheese boards in our Capital City:

Aviary Wine & Kitchen, 2110 S. Lamar Boulevard. Located on South Lamar, the neighborhood spot features a rotating list of cheese and are served with housemade pickles and preserves.

Easy Tiger, 709 E. 6th St. If you've never been to breadmaker Easy Tiger's beer garden, get there and stat. Their boards are themed and tackle a diverse set of flavors based on what you're feeling. You'll likely find their bakery items on many of the other local restaurants' menus.

Epicerie, 2307 Hancock Drive. If you're looking for a relaxed feel, Epicerie is a grocery-meets-cafe with fresh white walls and lots of natural light. Soft string lighting and lots of greenery decorates their outdoor area. Its cheeseboard rotates, so every time you go, you'll experience something different. You can also purchase their cheeses at the counter if one really spoke to you.

Blue Dahlia Bistro, 1115 E. 11th St. (East Austin); 3663 Bee Cave Road, West Lake Hills, Texas (Westlake); 107 E. Hopkins St., San Marcos (San Marcos). Blue Dahlia Bistro is European-style restaurant with multiple locations. Their beautiful cheese board features five assorted cheeses, olives, grapes and jams.

Culinary Dropout, 11721 Rock Rose Suite 100 (The Domain Northside). The Rock Rose-based contender's cheese/meat options are all al la carte, so you have the option to mix and match how you see fit to assemble the most magnificent spread you can imagine.

Vino Vino, 4119 Guadalupe St. At Vino Vino, you can order your board with three, five or seven (we triple dog dare you) cheese options that come with jam, nuts, honeycomb and raisin-pecan toast. And your waiter will provide you the most excellent wine to pair.

Cru Wine Bar, 238 W. 2nd St., Unit 13 (downtown); 11410 Century Oaks Terrace, No. 104 (The Domain). Cru calls their cheese plates artisan cheese flights, and that they are. Choose from three varieties that will truly tantilize your tastebuds.

Bufalina, 1519 East Cesar Chavez St. (downtown); Due location, 6555 Burnet Road. Bufalina is best known for its Neapolitan-style pizza, but as cheese is essential in any great 'za, it's not surprising they throw together a mean cheese plate. Rie de nangis, campo de montalban, red rock, marcona almonds, jam, rye crackers — fancy AF and waiting for you at one of the two locations.

Blackstar Co-op, 7020 Easy Wind Drive. The Co-op's food is as impressive as their in-house brews. Their board features a selection of Texas and domestic cheeses, condiments, rotating pickled vegetables and an Easy Tiger baguette.

Antonelli’s Cheese Shop, 4220 Duval St. (North Loop); Fareground, 111 Congress Ave. (downtown). Heaven is a place on earth for cheese lovers, and that heaven is Antonelli's. Likely the main supplier to many of the best in town, visit Antonelli's if you want to skip the lines, ambiance (and tipping), and make your own. You can preorder cheese trays to pick up at one of their two locations or peruse their selection in-store and assemble as you go. Oh, and if you don't feel like leaving the house, they collaborate with Favor to offer delivery
