HONOLULU — A spicy no-broth noodle dish and steamed bun stuffed with shrimp cutlet and other goodies make up two new summer dishes headlining for a limited run at JINYA Ramen Bar through Aug. 30.
Created by Vice President and Executive Corporate Chef Kazuya Takebe, the Spicy Maze-Men is “zero broth and all flavors,” according to a news release. The dish features extra thick noodles dressed and mixed with umami bonito sauce and egg yolk and is topped with pork chashu, kimchi, seasoned egg, and green and white onions. It’s then garnished with shredded bonito flakes and shredded nori.
The second summer dish, also a creation by Chef Takebe, is Ebi-Katsu Bun — a steamed bun stuffed with shrimp cutlet, cucumber, iceberg lettuce, pickled cabbage served with Jinya’s original spread sauce.
