SAN ANTONIO -- A local restaurant is making changes to its menu to make options more sustainable.

  • Couple gives their opinion over lunch
  • Owner recently changed lifestyle
  • Menu now offers vegetarian options

Joseph Knabel and his wife went out for a lunch date at The Cove.

"I was close by and we're San Antonio locals that have never been here before and it sounded like a really nice place," said Joseph Knabel. "I've heard a lot about it."

 

 

 

Little did they know, The Cove calls its food "S-O-L" -- sustainable, organic and local.

It fits right into certain lifestyles, including the Knabel's.

"Well, my wife likes to buy organic food and I eat whatever she buys," said Knabel.

That was a similar thought The Cove owner, Lisa Asvestas, had.

"I began to eat what I call clean and conscious," said Asvestas. "Then I realized that if I was going to be eating that way for me and my family then that's what I wanted for my community as well."

The menu has been evolving for nearly 20 years. Now, there's vegetarian, vegan and gluten-free options, which are more eco-friendly.

Scientist say animal food products release more carbon emissions than plant-based foods.

"I think it's extremely important that food be tied in to the talk around climate change," said Asvestas.

"I think it's a really great initiative to be organic, local and sustainable," said Knabel. "It's important for the environment and for our community."
