DALLAS – Patrick Gibbons is creating guilty pleasures without the guilt. He curated an organic fried chicken recipe that will satisfy your cravings, but keep you on track for those 2021 goals.

The Dallas native created the concept because he couldn’t find anything like it himself. He wanted to change the game for clean eating.

Cooking for friends is something Gibbons does often and after realizing one of his friends developed allergies, he created a fried chicken recipe she could eat.

“She became allergic to gluten, dairy, soy, corn… even chicken. But the thing in the chicken she's allergic to is cortisol," he said.

He started purchasing chicken that was free of the stress hormone cortisol as well as a gluten and dairy free skin. His main goal for the recipe was that it could be something he actually wanted to eat.

“I cook for me,” Gibbons said. "When I was coming up with my recipes my criteria was that it had to be so good that I just craved it.”

Gibbons says he can eat his chicken recipe several times a day and still feel good about what’s going into his body.  

He doesn’t use traditional oil like vegetable or peanut to fry the chicken. Instead, he uses coconut oil.

“Coconut oil is full of Omega-3s,” Gibbons said. “It’s healthy, it’s good for you. Not everybody is going to get this concept, you know. A lot of people really don’t care about the quality of their food.”

After finalizing his recipes nine months ago, he is excited to get his food out to the public.

“Everybody needs organic fried chicken,” Gibbons said.

Gibbons’s food truck will be parked just south of downtown Dallas in the parking lot of Full City Rooster on Akard Street.
