The Taste of Buffalo is the country's largest two-day food festival, and with just a matter of hours to go before the big day, preparation is in full swing.

Newcomers like Rachel's Mediterranean Grill are up for the challenge.

To prepare for thousands of people over the course of two days, Rachel's marinates more than 200 pounds of chicken in homemade souvlaki dressing, chops up about 10,000 thousand tomatoes, onions and cucumbers, and has thousands of pieces of pita bread ready to go.

"This might be our biggest catering to date," said Brandon Guzda, Rachel’s Mediterranean Grill Director of Operations.

It's Rachel's first time at the Taste of Buffalo, and for this local family-run business that's popping up all over the area, this has been a goal for years.

"Our owners, they've always said, Taste of Buffalo, we are a taste of Buffalo,” he said. “We're family owned and operated, we started here in Buffalo and we believe everyone in Buffalo should taste us," Guzda said.

For the Taste, they'll be serving up dishes that are already customer favorites, but are excited for everyone to have a chance to try them out for the first time.

First there's the chicken souvlaki wrap or rice bowl.

"Char-grilled chicken on our fresh Greek pita baked, and then it's topped with premium feta cheese, lettuce, tomato, onion and then our homemade Greek oil blended on top with our dill sauce," Guzda said.

Or try the falafel rice bowl. 

"With our brown rice, add that in there, which is our falafel which is our ground up chickpeas, cilantro, parsley, blend of herbs and spices and you also get your choice of lettuce, tomato, and onion on top, and lastly we top it off with our tahini sauce which is our sesame seed paste, garlic lemon juice, water and it's a vegan option as well, non-daily product and it goes great with the falafel as well," said Peter Walsh, Rachel's Mediterranean Grill Manager of Operations.

And of course indulge in some Greek fries.

"Fresh cut fry, topped with our premium feta cheese, smothered in our dill sauce dressing, homemade and then topped on top with our special Greek oil," Guzda said.
