CARTERET COUNTY, N.C. -- Caviar is a popular dish around the holidays, and if it's on your serving plate this year, it may have come from America's largest Russian Osetra caviar farm settled in eastern North Carolina.

Marshallberg Caviar Farm harvested roe for the first time this year at its east coast location in Smyrna, between Morehead City and Beaufort.

The farm's management says sales skyrocket by 600 percent between October and December.

It stands out from other aquaculture farms because it focuses on sustainability.

"We definitely want to start the trend of having sustainable aquaculture in America," said Lianne Won of Marshallberg Farm. "Because we import so much seafood from other countries where it's not a sustainable source. So we do want to be a role model for aquaculture not necessarily just caviar."

They conduct most of their business online.

Orders placed before 8:00 a.m. on Wednesday, December 26 can be fulfilled before New Year's Eve.
