SERVES:
makes approx. 2 cups
INGREDIENTS:
1 - 2 Tbs vegetable oil
2 large cloves garlic, peeled and minced
1 generous Tbs peeled finely minced fresh ginger
1/3 cup diced peeled onion
pinch red pepper flakes
1/4 tsp ground cinnamon
1 generous cup diced dried apricots
1/2 cup raisins
1 cup water
1/3 cup apple cider vinegar
1/4 cup light brown sugar
PROCEDURE:
It's a good idea to get all your knife work done before you start cooking anything.
Add 1 Tbs or so of vegetable oil to a medium size heavy bottomed stainless steel pot and cook the diced onion on medium heat.
Once the onion is translucent, add the minced garlic and minced ginger, add a little pinch of red pepper flakes and 1/4 tsp ground cinnamon and let that cook along for a minute.
Then add the generous one cup of diced apricots, 1/2 cup raisins, 1 cup water, 1/3 cup apple cider vinegar and 1/4 cup light brown sugar, stir to combine and bring it up to a simmer.
Let it steadily simmer along for 15 - 20 minutes until most of the liquid is absorbed.
Then, at that point, turn the heat off and let it cool down a bit, and then transfer it to a container and cool it down completely in the fridge and then keep it covered in the fridge until you're ready to use it.
Then you can let it warm up to room temperature before serving it with something like a grilled or broiled chicken breast.

Serve with chicken, turkey, duck, pork, lamb or salmon.
