CHARLOTTE -- Cast Iron Waffles has fed bellies and filled Instagram feeds since 2010, becoming the first restaurant in the area to offer eye-catching Belgian liege waffles.

“This is something that's really popular overseas, and it really hasn't gotten to the U.S. too much, so we wanted to try something new and different,” Duggan said.
Instead of a liquid batter, the waffles are made from an egg and butter filled brioche dough infused with imported pearl sugar that caramelizes on the waffle when baked.
“It’s more like a pastry cooked in a waffle iron,” Duggan said. “People are like, 'Where's the syrup?' We don't serve syrup because the sugar is already caramelized in there.”
It’s a perfect canvas to test your imagination and palette, with a wide choice of toppings. From "The Deluxe," topped with Nutella, bananas, strawberries and homemade whipped cream, to "The Lumberjack," featuring a maple butter cream and bacon.
“It’s a whole different experience,” Duggan said. “And I always warn people once you try one of these waffles you’re not going to want to go back to the other kind.”
