SERVES:
makes 12 biscuits
INGREDIENTS:
4 cups all-purpose flour
2 Tbs baking powder
2 Tbs sugar
1 tsp salt
1/3 - 1/2 cup chopped green onion (optional)
6 Tbs cold butter, cubed
1 1/2 cups buttermilk
PROCEDURE:
Preheat the oven to 400 degrees.
Use a large mixing bowl to combine 4 cups of all-purpose flour with 2 Tbs of baking powder, 2 Tbs of sugar, 1 tsp of salt and about 1/3 - 1/2 cup chopped green onion, if you're using it, and mix those together.
Next, add 6 Tbs of cubed, cold butter and use your fingers to incorporate that.
Then add 1 1/2 cups of buttermilk and mix everything together until it just forms a loose ball.....(try to leave small pieces of butter in the flour as you're working the butter into the flour and try not to over work the dough after adding the buttermilk)
Gently roll the dough out on a floured work surface into a 1 1/2 - 2 inch thick rectangle.
Use a knife to cut the dough into 12 squares, place those on a baking tray and place that onto the center rack of the preheated oven.
Depending on their thickness, the biscuits will take somewhere around 20 - 25 minutes to bake.
HINTS:
Instead of buttermilk, substitute regular milk with a Tbs or two of lemon juice or white vinegar added to it.
