ROUND ROCK, Texas — Several food trucks were damaged as a tornado swept through Round Rock on Monday. 

“The 21st of the month was actually our anniversary,” Lourdes Castillo, owner of Taqueria Jaguar Food Truck, said.

This month the business was celebrating seven years at the location before the tornado hit. Castillo says a roof attached to her truck was blown away and a refrigerator was damaged, but thankfully her truck remained intact. Her fellow neighbors were not so fortunate. 

Several trucks were blown to their side or blown yards away. Power poles nearby were also knocked down, taking out electricity used to run their business.

“They told us it could be one week to get the electricity back on, but looking at all the damages, it’s really looking like two to three weeks,” Castillo said. 

The truck caters to walk-up customers and food delivery apps such as GrubHub, DoorDash and Uber Eats. Castillo estimates they may lose thousands of dollars being out of business for so long. 

“It’s important [the business] because it’s how I support my family,” she said. “I have employees that work here, five employees working here that depend on the business.”

Castillo says they do not have insurance for the truck, instead they’re relying on the goodwill of people in the community and their customers as they opened a GoFundMe page.

Castillo is confident they’ll get back on their feet and back to business.
