SERVES:
makes 8 - 12 biscuits
INGREDIENTS:
1 cup small cubed cheddar cheese
1/2 cup chopped green onion
1 Tbs finely chopped fresh sage
1 stick cold unsalted butter, cubed
3 cups all-purpose flour
1 Tbs baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
PROCEDURE:
Preheat the oven to 400 degrees.
Finely cube the cheddar cheese, chop the green part of green onions, finely chop about 1 Tbs of fresh sage if you're using it, and also cube one stick of cold unsalted butter.
Add the butter to 3 cups of all-purpose flour in a large mixing bowl and add 1 Tbs baking powder, 1/2 tsp baking soda and 1/2 tsp salt and use a pastry cutter to incorporate the butter until it's pea size.
Then add the cheese, green onion and sage, if you're using it, and add 1 cup of buttermilk and use a spatula and then use your hands to gently mix that together until it just forms a ball.
Then roll the dough out on a floured surface into a 1 1/2 inch thick rectangle and cut it into 8 - 12 equal squares. (Smaller biscuits may take less time to bake)
Place those onto a baking tray, brush the tops with a little more buttermilk and place the tray into the hot oven.
They'll take around 22 - 25 minutes to bake and it's a good idea to spin the tray halfway around halfway through
HINTS:
These biscuits are great served by themselves or with something like sausage gravy or sliced and served with sliced ham as pictured above.
Be careful not to over work the dough if you can help it.
Substitute whole milk with a Tbs of lemon juice if you don't have buttermilk. Just let the combination sit a minute before adding it to the flour.
