INGREDIENTS:
6 - 8 slices bacon (see hints)
approx. 2 loosely packed cups julienne lettuce (romaine or iceberg)
2 small tomatoes, halved and thinly sliced
approx. 1/2 cup rough chopped fresh cilantro
1 ripe avocado
juice of 1/2 lime
toasted sesame seeds as needed (optional)
4 10-inch flour tortilla wraps
PROCEDURE:
Get started by crisping up as much bacon as you like.
While you're keeping your eye on that, julienne a handful of lettuce, halve and thinly slice as much tomato as you like, rough chop a handful of cilantro and scoop the ripe avocado out of the skin and use a fork to lightly mash it with a little fresh lime juice.
Once the bacon is nice and crisp, drain it on paper towels.
You can make these one or two at a time by spreading 1/4 of the mashed avocado on the lower third of the large flour tortilla and topping that with some optional toasted sesame seeds and chopped cilantro, topping that with pieces of the crispy bacon, some sliced tomato and julienne lettuce and then folding the edges in and wrapping them up just like you would a burrito.
Place a couple of frill tooth picks into each one and cut them in half and serve them up with your favorite potato chips or even some lime flavored corn tortilla chips.
HINTS:
Feel free to really load these up with more bacon if you like.
