RABBIT HASH, Ky. — After devastating flooding swept through several communities across the Commonwealth, businesses are still recovering.
Floodwaters rushed through the historic town of Rabbit Hash two weeks ago. On Friday, April 18 it was a different site, as business owners reopened their doors ready to serve locals and visitors.
Among those reopening their doors were Ernie and Megan Estrada, owners of Chef Hip E’s Cocina Loca. The couple has operated their restaurant for nearly five years, serving up delicious bold flavors.
When the floodwaters rose, they worried what damage it would cause, however, community members came out ready to help them.
“A bunch of the people the locals came...down to help us,” said Ernie Estrada. “We heighted at 36 inches, so three feet.”
Chef Hip E’s was one of the businesses in the area most affected by the flooding. Community members also cleared out the general store and helped business owners protect their store fronts and even came back for the cleanup.
“For small businesses like us, that are seasonal. It could have buried us," Estrada said. “Thank God we have the town and the people, our local customers and stuff.”
As people enjoyed the scenery, Rabbit Hash Mayor, a loyal canine named Boone and his owner, said the clear out and cleanup was a community effort leading to a great summer.
“During the clean-out, locals brought food down, and it was actually a celebration- a great excuse for spring cleaning,” Landwehr said. “It should be a great summer this year in the Rabbit Hash.”
The Estradas said they are thankful for the support and for being able to open their doors.
“An amazing town. And people just, they love my food, so I’m going to keep cooking. We’re going to keep going, man,” Estrada said.
