Major fast-food chains and brands are catering to the increasing demand for vegan and plant-based food options. According to a Gallup poll, nearly 3% of the U.S. population is now considered vegan, or someone who follows a plant-based diet.
At Take Two Cafe, owner Chelsea Heilmann’s culinary offerings extend beyond traditional salads and vegetables, featuring a diverse selection of soulful dishes, including hearty chickpea-based meals and savory tofu creations.
“There wasn’t any full 100% vegan kind of restaurant. So that was kind of like, wow, I think there’s a market for this,” said Heilmann.
