​​​​BUFFALO, N.Y. — ​There are plenty of Super Bowl food rituals people will be participating in the years, but we all know that pizza and wings will be the main course in most homes across the U.S.

The chicken wing, created here in Buffalo, has taken on many styles and flavors in the sixty plus years since their creation, and that brings us to the age old question – blue cheese or ranch? For most people here in Western New York, the popular choice is hands down blue cheese. But why?

Researchers at the Buffalo History Museum might have an answer. They’ve been collecting menus and other memorabilia from the Anchor Bar.

The Anchor Bar is actually credited with created the modern Buffalo wing. What they found is, staples like celery, carrots and blue cheese were a big part of the menu before wings were ever even a thing.

"They were serving blue cheese stuffed celery as an appetizer...now we know something their customers liked and were already serving it as an appetizer…and they had it on hand," Cynthia Van Ness, director of Library and Archives at the Buffalo History Museum, said.
