Vestal residents now have a new option when it comes to healthy eating. Core Life Eatery is set to open the doors to its newest location in the University Plaza Thursday. Camille DeLongis has a look at what they have to offer.

VESTAL, N.Y. -- The active lifestyle and clean-eating trend is certainly picking up, especially with the younger generations, so that's why the owners think Core Life will be a great fit right in University Plaza.

Core Life Eatery is a "fast casual" active lifestyle restaurant, and if you're all about clean-eating, or you're planning on trying to eat a little healthier starting with the New Year, then this place is definitely something to check out.

Core is a "fast casual" restaurant known for its greens, grains, and bone broth bowls that are packed with vegetables. You basically create your own bowl, and walk down the line selecting from dozens of nutritious toppings.

And you can't forget about the drinks -- they've got freshly made teas, lemonades, and juices that you won't want to miss out on.

Owners say their previous locations have been very popular since more people are starting to care about what goes in their bodies.

"Now instead of eating stuff that's processed, that's got artificial flavoring and colors, they're looking for stuff that's real, whole, and healthy and actually tastes great,” said Core Life Eatery Co-Owner Todd Mansfield.

“We've been waiting for a long time. I'm a senior now, and we've been waiting for something like this since my freshman year, so it's really exciting for it to finally come,” said Binghamton University student Ben Friedberg.

This is Core's eighth location to open, the sixth here in New York. Owners hope to have 300 up and running across the country within the next five years.

Now if you want to come check it out Thursday, the grand opening is at 11 a.m., right in the University Plaza.
