SERVES:

INGREDIENTS:

2 cups halved, pitted fresh cherries (see hints)

1 Tbs grated or finely minced fresh peeled ginger

1/2 cup real maple syrup

8 slices country bread (a few days old is best)

5 - 6 large eggs

4 Tbs milk

1/2 tsp vanilla extract

1/4 - 1/2 tsp ground cinnamon

butter as needed for cooking French toast

fresh chopped mint (optional)

plain nonfat yogurt (optional)

PROCEDURE:

Pit about 2 cups of fresh cherries and place those into a small - medium size mixing bowl.

Use a micro-plane to grate, or use a knife to finely mince, about 1 Tbs of fresh peeled ginger.

Add 1/2 cup of maple syrup to a small pot, add the ginger and heat that until it's just warmed through and then add that to the bowl with the cherries and gently toss to combine.

You can make less of that if that's too much maple syrup for what you need and French toast works best with sliced 3 - 4 day old bread and, to make the French toast, crack a few eggs into a wide shallow bowl and add a little splash of milk, a tiny splash of vanilla extract and ground cinnamon to taste and whisk it up.

Dredge the sliced bread in batches in the egg mixture and cook them in a heavy bottomed pan in a little butter on medium to medium high heat until golden brown on both sides and cooked through.

Serve with cherry ginger maple syrup, fresh chopped mint and plain nonfat yogurt.

HINTS:

Use less maple syrup and/or cherries if this recipe calls for more than you need.

French toast works best with 3 - 4 day old bread sliced into 3/4 - 1 inch thick slices.
