SERVES:

INGREDIENTS:
2 thick slices of ham (cut in half crosswise to make 4 thick slices)
1 Tbs butter
2 slices bacon, diced
1/4 cup diced onion
1 tsp Dijon mustard
2 Tbs maple syrup
1/2 cup strong black coffee
fried or scrambled eggs or baked beans as needed
toast as needed
PROCEDURE:
Heat a cast iron skillet on medium high heat, add a dollop of butter and add two chopped slices of bacon and about 1/4 cup diced onion.
Turn the heat down a bit if you need to and, once the onion is translucent and the bacon has crisped up, scoop that out of the skillet onto a clean plate.
Try to leave the butter and the rendered bacon fat in the skillet, turn the heat back up a little bit, add the ham steaks and cook those along to brown up on both sides and heat all the way through.
You may choose to flip the ham over more than once and, at some point, you'll need make some toast and fry your eggs or heat up some baked beans if you're using those.
When you're happy with the ham, scoop it out of the skillet and place it on plates with the toast.
Then add the bacon and onion back to the skillet, add a little dollop of Dijon mustard and a little splash of maple syrup and add 1/2 cup black coffee, stir everything together, cook it along for a minute and it's time to eat.
HINTS:
Use a separate pan to cook the eggs or heat the baked beans as the ham is cooking.
