PROCEDURE:
Listed below are a few versions of bagel sandwiches that seemed pretty popular in my kids school lunch boxes.
Use an everything bagel to make a vegetarian sandwich with a tiny bit of mayonnaise, thinly sliced cheddar or Muenster cheese, some julienne lettuce, thinly sliced Bell pepper, tomato and cucumber.
Or, use a sesame bagel topped with hummus and a vegetarian chik pattie and some thinly sliced avocado.
Make an Italian style bagel my spreading a little marinara sauce on the sliced bagel and topping that with some sliced pepperoni and sliced provolone or shredded mozzarella cheese and toasting it underneath the broiler until the cheese melts.
You'll want to let that cool down to room temperature before putting it together as a sandwich and you can even make it the night before and keep it in the fridge.
You can slice those in half before wrapping them up and packing them in the lunch box with some fresh fruit, a little something sweet and a juice box.
HINTS:
Just put cheese on one half and pepperoni on the other half of the Italian style bagel....in may be enough.
A chik pattie is a vegetarian pattie that's made to resemble chicken meat in texture.
