Situated in the Marist College area of Poughkeepsie, you'll find Cosimo's Restaurant, featuring a very recent renovation and a menu to suit many appetites.

"This restaurant has been here for about 11 years. As you can see we just re-did the whole restaurant -- brand new menu, new decor. We updated some of the features and stuff. The menu itself is very in depth. It's a great menu there's a lot of good food on there, fresh produce, and local purveyors that we use," said Damien Brady, the operations manager. Using Hudson Valley ingredients helps to bring in the community aspect of the restaurant.

"We try to source out our food to local people. The owners believe that you think local first, support the local community and we hope that the community supports us as well," said Brady.

Using those local ingredients, the kitchen staff puts together some tried and true dishes, with their own style.

"Traditional Italian. We take great lot of pride in our pizzas and pastas. We do a wood-fired brick oven. Our pastas are all traditional Italian but we develop deep, deep flavors with local ingredients and a different spin and different flair. My favorite thing to cook is a nice dish of pasta just because it's simple yet it's elegant in the way it's presented and the flavors you can build in a traditional pasta like that," said Corporate Executive Chef Matt Sherry.

Whether it's a night out with the family, or taking your special someone out for a bite, the staff at Cosimo's hopes to provide the backdrop for an enjoyable evening.

"I just want everyone to have a comfortable, good experience where they're comfortable in the atmosphere and they have a great meal and go home happy," said Sherry.

"We want the customer to experience; first of all, have a great meal enjoy the comforts of the restaurant. When people leave here we want them to be happy and that they'll come back again and enjoy the experience that we have at this restaurant," said Brady.
