Rochester's first kombucha brewery will celebrate its one year anniversary next month.

Katboocha on Railroad Street brews the fizzy tea beverage.

The fermented tea is made from all-natural ingredients — tea, cane sugar and live cultures.

Katarina Schwarz brews five flavors of kombucha; jasmine, ginger, grapefruit, beet and vanilla.

"It's a sparkling tea that is low in sugar, low in calories and high in good microbes for your gut, so we actually take a tea and add sugar to it and add a kombucha culture and it ferments over a period of days and you are left with a tangy, bubbly tonic," Schwarz said.

Her bottled Katboocha is available at Hart's and Lori's Natural Foods and the first Saturday of the month at Rohrbach Beer Hall on Railroad Street.
