ROTTERDAM, N.Y. — For Tina Coons, mixing spices is serious business.

She welcomed Spectrum News into her Rotterdam home the day before Thanksgiving, to demonstrate how her hot sauce is made. She wheeled an industrial tool box into the kitchen with all her utensils.

“My goal is to distribute it not only locally but across the country. I won’t rest until it is across the country,” said Coons.

Tina is the founder and owner of “Tina’s Wing’ It.” She makes Buffalo style sauces and marinades. Tina first developed the signature recipe for chicken wings to serve at a pizzeria she owned 1999.

“When I sold it, I vowed that because this sauce was so popular, I would bottle and sell it one day,” said Coons.

Today, her products are made and bottled at a plant in Oneonta. They’re sold on her website and at 26 local stores.

Balancing a full time job, Tina works 90 hours a week. The reward, she says, is well worth it and her ambition is as bold as the flavor of her sauces.

When it comes to customers, Coons says, “I just want them to remember me and the fact that it is the best hot sauce ever.”
