Cream puffs, chocolate mouse and almond rings, oh my. You name it, they bake it at Chrusciki Bakery in Lancaster, especially this time of the year.

"It's been a crazy season,” Dominique Emer, the creative director at Chrusciki Bakery. “We started with Paczki Day, which really kicks off our Easter season.”

There's no rest for Emer, or the rest of the employees.

"Everything from making sure we have the proper inventory of supplies, all the containers, the shopping bags, making sure we have enough the ingredients to make the yummy products," Emer said.

Emer says the family business may have it down to a science after three decades, but each year, people are indulging even more adding some spice to the tradition.

"Literally thousands of everything," Emer explained.

There are two people who measure, mix and bake it all.

"Per night, we have been doing like 200, it's been getting higher and higher,” Kevin House, an assistant baker said. “This weekend, it's been like 400."

That's just almond rings. House and head baker Jenni, who preferred to remain the mystery ingredient, are the people to thank.

"It's a lot of work I guess, right,” House smiled.

Their shift starts at midnight. So, by the time the sun rises, ricotta strudel and cookies alike are ready for the Broadway Market stand and the shelves at the brick and mortar location in Lancaster. House says the recipe to get it all done is nothing exciting, it's the new flavors or toppings.

"I just discovered I like powdered sugar," he laughed.

House isn't alone when taking a lot of pride in sharing the Easter tidings of joy. This year is extra special for Emer and her family: They're going back to their roots.

"My grandparents, they baked at the Broadway Market and they sold out of the window at Chrusciki Bakery,” Emer said. “But, this year we gave it a facelift and we will be serving our hot pierogi out of that window."

Good news if you want to get your hands on any of this Easter goodness. The bakery is open next Thursday and Friday from 6 a.m. to 7 p.m. and Saturday 6 a.m. to 5 p.m. It will be closed Sunday, but then back open Monday for Dyngus Day.
