SERVES:

INGREDIENTS:

1/2 - 1 ripe avocado

Lime juice to taste

salt to taste

corn tortilla chips as needed (see hints)

canned black beans as needed (well drained and rinsed)

grated cheese as needed (Monterey Jack or cheddar or a blend)

tomato salsa (optional)

carrot sticks (optional)

 

PROCEDURE:

To make a simple version of guacamole, scoop the flesh of a ripe avocado to a mixing bowl and add some optional finely minced garlic (I'm not doing that today) and squeeze some lime juice into it with a little pinch of salt and use a fork to mash it up.

You can make that ahead of time and keep it cold with a tight layer of plastic wrap on the surface until you're ready to use it.

To make the black bean nachos, place a layer of corn tortilla chips onto a plate or into a large shallow bowl and top that with a sprinkling of well drained canned black beans and some grated cheese and then repeat that process finishing up with the cheese.

You can make this up to this point ahead of time and then, once your kid comes home, pop the nachos into the microwave for a minute or so, until the cheese has melted.

Then, serve it up with some of the guacamole on the side, a little store bought tomato salsa and some carrot sticks

 

HINTS:

There is good, healthy fat in the avocado and protein in the black beans and cheese and you can make it extra healthy by using low sodium or unsalted corn tortilla chips.
