SERVES:
4 - 8
INGREDIENTS:
4 large baking apples (such as golden delicious or Granny Smith)
1/2 cup water
approx. 1/2 tsp ground cinnamon
approx. 1/2 tsp ground ginger
approx. 1/3 cup real maple syrup (plus more for garnish)
nonfat vanilla yogurt for serving
granola as needed for serving
PROCEDURE:
Preheat the oven to 400 degrees.
Remove the stems from 4 apples and then cut each apple in half through the equator and carefully use a paring knife to cut a cone shape to remove the cores.
Then place the apples into a baking dish cut side up, add 1/2 cup of water, top with aluminum foil and place into the preheated oven.
If the apples are on the large side and they'll take around 30 - 35 minutes to bake and it's a good idea to spin the baking tray halfway around halfway through and check them regularly so as not to over bake them.
When they are soft, but not too soft, turn the broiler onto the high setting, remove the foil and sprinkle a little ground cinnamon and ground ginger over the apples. Spoon a little maple syrup on top and then place that underneath the broiler to cook for a few minutes.
Serve the apples on top of some vanilla yogurt, add some granola to that and finish with a little more maple syrup if you like.
HINTS:
Serve a whole apple of just half depending on appetite.
Use homemade or store bought granola and, although this recipe uses golden delicious apples, you could use other apples you have on hand they just might take a different amount of time to bake.
