Brewtus Roasting, a specialty coffee company, just opened a roastery and tasting room in Delmar. The company began serving customers in late April. The small business is housed in a former auto body. The space has been transformed to meet the needs of owner Stephen Pivonka.

“I have to have a cup of coffee. I am definitely the ... I don’t speak a lot before the coffee happens," Pivonka joked. 

Pivoka walked away from a 16-year-career as a data analyst to pursue his dream of owning a specialty coffee company. For this meticulous business owner, roasting coffee beans is still all about the numbers. He's been drinking coffee since age 6.

“It was a culture in my household and my grandmother introduced me," Pivonka said. 

Twice a week, Pivonka roasts in bulk, using beans sourced from all over the world. He also operates a tasting room, open Monday through Friday.

Pivoka is eyeing expansion. He aspires to open additional locations and hire staff. But he knows, like brewing quality coffee, the process can’t be rushed. He believes patience will pay off when he’s prepared to serve more.
