“Whatever strikes my eye at the market. Whatever I see that looks fresh and exciting,” Tracy Mesiti said.

She’s the chef at Deep Sea Seafood Market where the menu changes every week.

“I always like to keep a variety of fish constant,” owner Larry Mesiti said. “I don't like to have the same items.”

Tracy and Larry Mesiti moved to Charlotte in 2012 and opened the market out of personal compulsion.

“Basically, it was for fulfilling my own necessity of wanting to eat fresh fish,” said Tracy.

Larry was content to keep Deep Sea Seafood Market exclusively a retail seafood provider until people tasted his wife’s cooking.

“Because our food was so good and the customers really liked it, the demand got up,” said Larry.

“[Customers] come and they look for things that are a little unique and can’t find other places,” said Tracy.

Often times the recipes are a bit experimental, but they’re always on the minimal side. Tracy said every item on the menu is built to showcase the freshness of the seafood.

“Why over complicate things if you don’t need to?. If the fish is good, if it’s fresh, you don’t need crazy amounts of extra additives and things like that," said Tracy.
