RALEIGH, N.C. – Authentic Asian cuisine served with a modern and innovative edge.

That’s the appeal of downtown Raleigh’s brand new O-Ku Sushi restaurant.

New York City native, Richard Fong, is O-Ku’s executive chef and has thirty years of high-end culinary experience.

Fong moved to Wake County with his family fifteen years ago and is passionate about creating a memorable dining experience for customers.

His familiarity with Raleigh’s vibrant food scene is a complementary blend for the culture and cuisine of O-Ku.

"In the last few years I've seen that people are moving to the Raleigh area. People who are used to eating in the big city want something good now," said Fong about the fast-growing Raleigh market.

"When people leave with a smile that makes me really happy."

Fong is known for his acute attention to detail while adding a creative twist to classic Japanese dishes.

"He's been in Raleigh for fifteen years, so I think he's got a feeling for this market and what people like and what they want," added Robert Locke, general manager of O-Ku Sushi.

O-Ku also prides itself by serving the freshest fish from the world’s finest markets along with flavorful local ingredients.

The extensive menu include traditional asian entrees along with items that reflect the specialties Fong perfected during his career.

"This is an opportunity for our chef to shine and put his twist on things," added Locke.

Some of the popular items include:

  • O-Ku Nigiri
  • Uni Udon with lobster, scallops, asparagus and shiitake mushrooms.
  • Black Widow roll with soft shell crab, snow crab, tobiko, cucumber, avocado, squid ink ride, kimchi aioli, soy glaze.
